Organic Lamb & Mutton Sausages & Burgers

Our sausages and burgers are freshly made to order each week, using organic, pasture-fed lamb or mutton, depending on seasonality.

We do not use pre-mixes for our recipes. Each batch is carefully made to recipe, using organic ingredients. After traditionally making our sausages by hand and with natural casings, we hang them to ‘condition’ for 12 hours at 2deg C, during which the sausage mix settles in the casings, excess moisture evaporates, and herbs and spices infuse.
