We cure our Lonza from the loin of pork, from free-ranging, pastured, outdoor, high welfare pigs.

We air-dry it in coarse sea-salt and herbs (Rosemary and Garlic), for several months in our 200 year old stone barn and then thinly slice it for a delicately, delicious addition to your charcuterie platter!
