“Sugar-free Cure”

Ingredients: Pasture For Life Beef, Dry-Cure* (Sea-salt, Sodium Nitrite E250. See below re our minimum use of Nitrites. We don’t use Nitrates), Black Pepper, Coriander, Cinnamon, Clove, Allspice. *Non-organic

Storage: Keep refrigerated. Once opened, consume within 3 days and by ‘use by date’ shown. Suitable for home freezing.

A limited use of Nitrites (and also Nitrates), is permitted under Organic Regulations (https://www.soilassociation.org/media/25988/sa-gb-food-drink.pdf ref SA GB 6.4.2), allowing up to 80 parts per million in the cure.  We use considerably less than this in our own bespoke cure (less than 10ppm). The post-curing and post-cooking tests that we have undertaken demonstrate the significant reduction of residue in our cured products. Additive residue and cure accelerators used by industrial scale curing is the health issue with quantities used up to 250ppm.
