Our Fennel Salami has been awarded the top  3-star Gold Award at 2022 Great Taste Awards. The Judges praises included “This salami has been made with great finesse to ensure first class texture and a stunning array of flavours; very well made indeed”.

Though it started as a humble all-meat sausage ‘banger’ with fennel seeds some 25 years ago, our recipe has evolved to reflect the Finnochiona Salami from Tuscany though with a  Peelham twist in the addition of Carraway Seeds, Aniseed, Pink Peppercorns, a flush of Paprika and a little red wine.  A lovely combination of exciting flavours and particularly good with ice-cold vodka!

 

Ingredients: Free-range *Pork (70%), Free-range *Pork fat (20%), *Curing Salt (*sea-salt, E250 Sodium Nitrite), Red Wine (contains Sulphites), Paprika, Fennel, Garlic, Herbs & Spices. *Natural beef sausage casing. *Non-organic.

***With ageing, a natural mould will develop.

 

Weight: Buy it as a whole 150g salami or sliced in 50g/pack.
